This simple to make food is delicious.
a few Zucchini medium sized or 1 large chopped. a large onion finely diced. 1/2 cup bread crumbs dried 1/3 cup parmesan cheese salt and pepper to taste 6-8 eggs butter or olive oil for cooking cook the onion first and mix them with the breadcrumbs and cheese, then cook the zucchini,and mix them in also. Beat eggs and salt and pepper till mixed nicely, pour into zucchini mix and fold to a thick mixture, pour this into a greased pan the one used to cook the onion and zucchini if large enough, cook over slow heat covered to set the mixture,and not to burn the bottom, then when cooked through sprinkle more cheese on top and pop under grill to brown and finish cooking, when cooked cut into wedges and enjoy hot or cold with salad and chips or whatever takes your fancy.
